I can’t believe I have only made this dessert once before: the Tarte Tatin. All you need are a few delicious apples, butter, sugar and – for the quick-hack version – some frozen puff pastry. You don’t even need a recipe (the one in my first try was kind of weird anyway). Still here’s what I did:
- 1-2 TS butter (50g)
- 4-5 TS sugar (some more sugar than butter!)
- 3-4 (cooking -> Elstar) apples sliced (don’t make the slices too small!)
- 4 squares of frozen puff pastry
- a pan to make this in that you can put in the oven (I have a special cast-iron Tarte Tatin form from Le Creuset)
Steps to follow:
Make some caramel from the sugar and the butter. I waited until it was light brown. It was way too much so I just took some out of the pan.
Then arrange the apple slices in the pan as you see fit.
Cover with the dough (mine was still part frozen … never mind that)
Put in the oven at 180Â°C for as long as it takes for the dough to turn lightly brown (I believe it was in the oven between 30 and 40 minutes)
Eat while warm! Delicious ….
The infamous apple crumble is nearly as nice but not quite …
