Currently these are my favorite muffins and after reading a bit on Chocolate and Zucchini on making the famous IKEA cookies, I feel like blogging down the recipe. These are very chocolaty and the sweet coco filling makes the choclate stand out even better. And not only are these muffins very easy to make but they look very nice and the dark muffins with the light filling make for nice ‘Ahs’ and ‘Ohs’ from your guests.
This recipe is for 12 muffins.
First prepare the filling, mix together:
– 80g of coco (flakes?)
– 2 tablespoons of cream
– 2-4 tablespoons of sugar
– 70g of soft or liquified butter
Mix together in one bowl
– 250g of flour
– 1 teaspoon of baking powder
– 1/2 teaspoon of baking soda
– 2-3 tablespoons of unsugared cocoa powder
– 50-70g of chocolate bits or chips
Mix together in a second bowl
– 1 egg
– 100g of sugar
– 250 ml of buttermilk (chocolate flavored if possible)
– 125g of soft or liquid butter
Mix together the ingredients of the two bowls. But don’t stir too much, just until all the dry stuff is mixed up with the liquids. Preheat the oven to 170-180°C
Fill half of the dough into your muffin forms, then add 1-2 teaspoons of the filling and finally fill in the second half of the dough. Bake for 20-25 minutes. After baking (and cooling down a bit) dip each muffin into liquid milk chocolate and sprinkle with coco flakes.
