Make Food Out of Air

It’s week-end. I forgot to shop for groceries. Well I didn’t forget, I just ignored the fact that it was week-end. But somehow at around 7:30p.m. I felt like fancy cooking. For actual shopping it was too late. I took a look at our fridge and decided I would make a menu from whatever was there.

Here is a list of the ingredients that were available:

– 2 pieces of smoked salmon
– a bit of cream cheese and ‘Quark’
– a bunch of ‘echalotes’
– nearly full bottle of cheap white wine for cooking
– one pack of ‘Rucola’ lettuce
– a piece of Parmigiano
– 6 eggs
– a glass of olives

Plus the usual stuff we have at home: broth, onions, garlic, spices, rice (different types), Sherry, sugar, lemon juice, more wine, …

The result was tasty:

Rucola Risotto on Rucola Salad in Balsamico Vinaigrette
Cream of Champagne
Cheese Puffs and Olive Snacks

Accompanied by a 1996 Chablis from my father 🙂

The Salmon and the Consommé were taken from the (very good) Isabell Allende cookbook, the Rucola Risotto was inspired by a similar recipe by Johann Lafer and the dessert was in my french cookbook. The after dinner snacks are my personal traditional snack recipes.
